Malawi Mchezi Hill

Mchezi Hill Estate is a 360ha farm in Kasungu, central Malawi. The farm produces both Macadamia nuts and coffee, and prides itself on it's attention to detail, strict quality standards, and the training and empowerment it provides to the local community.

The ripe coffee cherries are floated to sort by density, with the highest quality cherries used for this particular lot. The cherries are depulped and then dry fermented for an average of 36 hours. The coffee is then washed with fresh water and soaked before being dried on raised beds for 7 to 10 days and the optimum moisture content is reached. The parchment is raked to ensure even drying, shaded during the hottest part of the day and covered overnight to protect it from moisture contamination from condensation.
